No Bake Energy Bites

My. New. Obsession. Actually it’s not really all that new. It’s just that the appeal never really wore off. I make these at least….at LEAST 4-5 times a week. My kids pop these things like popcorn (ignore my super lame analogy ). And ya know what? I can’t even get mad because the ingredients aren’t bad for you and they’re packin hella protein. Everybody loves helping me make these and because they’re so simple the big kids even make them by themselves.

These are perfect for lunchboxes, after school snacks, paired with a smoothie for breakfast and pretty much whatever you want to use them for. We have a HUGE problem keeping them in stock (can non-store people say that) because we are constantly grabbin em out of the fridge during the day and whenever Olivia asks if she can have one she means can she have 29.

Another thing I love about these, besides not having to turn on my oven is that it’s sooo easy to change it up. We make them with and without organic chocolate chips, sometimes we use almond butter instead of peanut butter. We go back and forth between 100 percent pure maple syrup and raw honey. And if you are the type of person that might enjoy eating Easter grass I suppose you can add shredded coconut as well. (Yuck)

I think this is a really fun recipe and honestly the add-in possibilities are whatever you make them. I’m gonna give y’all the basic recipe we use and I’ll leave some stir in suggestions at the end of this post.

INGREDIENTS

  • 2 cups gluten free rolled oats
  • 1 cup peanut butter (or any nut butter you desire)
  • 1 cup ground flax seeds (can I just say that I’ve made these energy bites six trillion times and RIGHT when I decide that I wanna share the recipe with y’all my oldest child broke my blender so we were literally outside crushing flax seeds inside of a ziploc bag with the bottom of a mason jar. Judge me. I don’t care)
  • 1 cup organic chocolate chips
  • 2/3 cup raw honey or pure maple syrup
  • 1 tbsp vanilla extract (not the cheap imitation stuff guys)
  • 2 tsps cinnamon

DIRECTIONS

Listen, there’s nothing real technical about this. Throw everything in a bowl (keep an eye on small children because they WILL eat all of the chocolate chips when you’re not watching). Stir well and chill in the fridge for about an hour.

Roll into little bite size balls and enjoy. I can’t tell you how many this will make because mine are never equal. Some of my kids make them as big as their heads and then some of em are the size of a marble. Whatever. It’s not life we’re on Iron chef or anything. Also, I would tell you to store in an airtight container but if you have kids they won’t remember to put the top all the way back on so it doesn’t even matter. Word on the street is that these will stay good for up to a week in your fridge but I’ve never had energy bites last more than two days. Enjoy!!
